Ingredients
- 1 pound firm peaches
- 1/2 cup fresh blueberries
- 10 tablespoons vegan butter
- 1 1/2 cups all-purpose flour
- 1 cup organic cane sugar
- 1 cup full-fat oat milk
- 1/3 cup organic brown sugar (or coconut sugar)
- 1 teaspoon ground cinnamon
- 1/4 teaspoon freshly grated nutmeg
- Scant 1/2 teaspoon ground ginger
- 1/8 teaspoon ground cardamom (optional)
- Scant 2/3 cup old-fashioned rolled oats
- Scant 1/2 teaspoon kosher salt
- 2 teaspoons baking powder
- 1 1/2 teaspoons pure vanilla extract
- 1/4 teaspoon pure almond extract (optional)
- Vegan vanilla ice cream (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Prepare the fruit filling by slicing peaches and mixing them with blueberries, sugar, and spices. Let sit for 30 minutes.
- Toast the vegan butter in a cast iron skillet until golden brown.
- In a separate bowl, combine flour, oats, sugar, salt, and baking powder. Mix in oat milk and vanilla.
- Assemble by spooning batter over the toasted butter and layering the fruit on top.
- Bake for 45-50 minutes until golden brown and bubbly. Cool slightly before serving.
