Ingredients
- 1 lb boneless skinless chicken breasts (diced)
- 1 tsp olive oil
- 1/4 cup low sodium soy sauce
- 1/4 cup water
- 1 tbsp honey
- 1 tbsp rice vinegar
- 1 tbsp cornstarch
- 1 tsp sesame oil
- 2 tsp grated fresh ginger
- 2 cloves garlic (minced)
- Sweet gem lettuce leaves
- Sesame seeds (for garnish)
- Sliced green onion (for garnish)
Instructions
- In a mixing bowl, combine soy sauce, water, honey, rice vinegar, sesame oil, cornstarch, ginger, and garlic. Mix well.
- Heat olive oil in a skillet over medium-high heat. Add diced chicken and cook for about 5 minutes until one side is browned. Flip the chicken and cook for an additional 3 minutes.
- Pour the prepared sauce over the chicken and reduce heat to low. Simmer for another 3-5 minutes until the sauce thickens.
- Lay out sweet gem lettuce leaves on a platter and spoon the teriyaki chicken mixture into each leaf.
- Garnish with sesame seeds and sliced green onions before serving.
