- 1 pound lean ground beef
- 4 medium sweet potatoes
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 cup chunky salsa
- Shredded cheese, diced tomatoes, avocado (for toppings)
Instructions
- In a large skillet over medium-high heat, brown the ground beef with chopped onion and minced garlic until cooked through. Drain excess grease.
- Stir in taco seasoning and salsa; cook for an additional 5 minutes on medium-low heat until thickened. Adjust consistency with water as needed.
- Poke holes in each sweet potato and microwave on high for 8-10 minutes until tender, turning halfway through.
- Let cool slightly, slice open lengthwise, and fluff insides with a fork.
- Spoon the seasoned beef mixture into each sweet potato and top with desired toppings.
