Ingredients
- 1 cup of steamed and mashed sweet potato
- 1/3 cup of cocoa powder
- 1/4 cup of oat flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup of peanut butter (or nut/seed butter)
- 1/4 cup of maple syrup
- 1/4 cup of melted coconut oil
- 3/4 teaspoon vanilla extract
- 1/3 to 1/2 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 baking pan with parchment paper.
- Steam, peel, rinse, and dice the sweet potato until soft, then place it in a food processor.
- Add cocoa powder, oat flour, baking soda, salt, nut butter, maple syrup, melted coconut oil, and vanilla extract to the food processor. Blend until smooth.
- Stir in chocolate chips gently and pour the mixture into the prepared baking pan. Top with additional chocolate chips if desired.
- Bake for about 25 minutes or until a toothpick comes out clean. Let cool before slicing.
