  • 1 cup of steamed and mashed sweet potato
  • 1/3 cup of cocoa powder
  • 1/4 cup of oat flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup of peanut butter (or nut/seed butter)
  • 1/4 cup of maple syrup
  • 1/4 cup of melted coconut oil
  • 3/4 teaspoon vanilla extract
  • 1/3 to 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 baking pan with parchment paper.
  2. Steam, peel, rinse, and dice the sweet potato until soft, then place it in a food processor.
  3. Add cocoa powder, oat flour, baking soda, salt, nut butter, maple syrup, melted coconut oil, and vanilla extract to the food processor. Blend until smooth.
  4. Stir in chocolate chips gently and pour the mixture into the prepared baking pan. Top with additional chocolate chips if desired.
  5. Bake for about 25 minutes or until a toothpick comes out clean. Let cool before slicing.
