  • 1 cup steamed and mashed sweet potato
  • 1/3 cup cocoa powder
  • 1/4 cup oat flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup peanut butter
  • 1/4 cup maple syrup
  • 1/4 cup melted coconut oil
  • 3/4 teaspoon vanilla extract
  • 1/3 to 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 baking pan with parchment paper.
  2. Steam the peeled and diced sweet potato until soft, then mash.
  3. In a food processor, blend together the mashed sweet potato, cocoa powder, oat flour, baking soda, salt, peanut butter, maple syrup, melted coconut oil, and vanilla until smooth.
  4. Stir in chocolate chips by hand and pour into the prepared pan. Top with more chocolate chips if desired.
  5. Bake for about 25 minutes or until a toothpick comes out clean. Allow to cool before slicing.
