  • 8 oz low-moisture mozzarella (cut into cubes)
  • 3 cloves garlic (minced)
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • Olive oil (for searing)

Instructions

  1. In a skillet, heat olive oil and sauté minced garlic until fragrant. Add spinach and cook until wilted; cool slightly before chopping.
  2. In a mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, salt, pepper, egg, and chopped spinach. Mix gently until just combined.
  3. Take a portion of the mixture and flatten it in your palm. Place a cube of mozzarella in the center and encase it fully with the meat mixture; form into balls.
  4. Heat olive oil in a skillet over medium heat. Sear the meatballs for about 2–3 minutes on each side until golden brown.
