- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine cottage cheese, chopped spinach, artichoke hearts, minced garlic, and grated parmesan cheese. Mix well and season with salt and pepper.
- Slice each chicken breast horizontally to create pockets and fill them generously with the spinach-artichoke mixture.
- Place the filled chicken breasts in a large baking dish, drizzle with olive oil, and season again if desired. Bake for approximately 25 minutes or until the chicken is fully cooked.
