Ingredients
- 1 1/2 pounds boneless skinless chicken breasts
- 3 bell peppers (green, yellow, red)
- 1 yellow onion
- 2 cloves garlic
- 3 Tablespoons vegetable or canola oil
- 1 lime
- 1/4 cup fresh cilantro (chopped)
- 1 Tablespoon chili powder
- 1 1/2 teaspoons paprika
- 1 1/2 teaspoons cumin
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper (optional)
- Salt and freshly ground black pepper
- 8–10 small flour tortillas
Instructions
- Preheat oven to 425°F and lightly grease a large sheet pan.
- Slice chicken into strips and bell peppers and onion into strips.
- In a mixing bowl, combine seasoning ingredients and coat chicken and veggies evenly.
- Spread veggies on the pan first, then add chicken on top.
- Roast for 15-20 minutes until chicken reaches 165°F.
- Warm flour tortillas during the last 5 minutes of cooking.
- Serve with fresh lime juice and desired toppings.
