  • 1 1/2 pounds boneless skinless chicken breasts
  • 3 bell peppers (green, yellow, red)
  • 1 yellow onion
  • 2 cloves garlic
  • 3 Tablespoons vegetable or canola oil
  • 1 lime
  • 1/4 cup fresh cilantro (chopped)
  • 1 Tablespoon chili powder
  • 1 1/2 teaspoons paprika
  • 1 1/2 teaspoons cumin
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and freshly ground black pepper
  • 810 small flour tortillas

Instructions

  1. Preheat oven to 425°F and lightly grease a large sheet pan.
  2. Slice chicken into strips and bell peppers and onion into strips.
  3. In a mixing bowl, combine seasoning ingredients and coat chicken and veggies evenly.
  4. Spread veggies on the pan first, then add chicken on top.
  5. Roast for 15-20 minutes until chicken reaches 165°F.
  6. Warm flour tortillas during the last 5 minutes of cooking.
  7. Serve with fresh lime juice and desired toppings.
