- 2 large eggs
- ⅔ cup unsweetened creamy peanut butter
- 1 (5.3-oz) container plain Greek yogurt
- 1 tsp pure vanilla extract
- 1 ½ cups quick oats
- ½ cup protein powder of choice
- ⅔ cup granulated sweetener of choice
- 1 tsp baking powder
- ¼ tsp baking soda
- ½ tsp ground cinnamon
- ½ tsp sea salt
- 2/3 cup sugar-free chocolate chips
Instructions
- Preheat the oven to 350°F and line a cookie sheet with parchment paper.
- In a mixing bowl, blend together eggs, peanut butter, Greek yogurt, and vanilla extract until creamy.
- Stir in quick oats, protein powder, sweetener, baking powder, baking soda, sea salt, and cinnamon until combined.
- Fold in chocolate chips gently.
- Drop mounds of dough onto the cookie sheet with space in between.
- Bake for 9-11 minutes or until edges are lightly golden brown; cool before serving.
