- 15 oz. chickpeas (drained and rinsed)
- 1 cup creamy peanut butter
- 1/3 cup maple syrup
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Rinse chickpeas under cold water and transfer them to a food processor. Pulse until coarsely chopped.
- Add peanut butter, maple syrup, vanilla extract, baking soda, and salt. Blend until smooth.
- Stir in chocolate chips using a spoon until evenly mixed.
- Scoop dough onto the prepared baking sheet and flatten slightly. Bake for 10-12 minutes until edges are set but centers remain soft.
- Cool on the baking sheet for five minutes before transferring to a wire rack.
