Ingredients
- 4 small-medium chicken breasts (or 2 large, halved)
- Salt and pepper
- 2 tablespoons olive oil
- ½ cup grated Parmesan cheese
- ½ cup panko breadcrumbs
- 3–4 cloves garlic, minced
- 1 cup light cream or heavy cream
- 1 tablespoon Italian seasoning or oregano
- 1 cup spinach, chopped (optional)
Instructions
- Preheat the oven to 400°F (200°C). Season chicken with salt and pepper.
- In a bowl, mix panko breadcrumbs and grated Parmesan.
- Heat olive oil in a skillet over medium heat. Coat each chicken breast in the breadcrumb mixture and cook for 4-5 minutes on each side until golden.
- Transfer to a baking sheet and bake for 10-15 minutes until cooked through.
- In the same skillet, sauté minced garlic until fragrant, add cream and seasoning, and stir until smooth.
- Serve chicken topped with creamy garlic sauce.
