- ¾ cup diced apples

Instructions
- Preheat the oven to 350°F (177°C) and grease a mini muffin pan.
- In a small bowl, mix melted coconut oil, dairy-free milk, applesauce, and vanilla extract.
- In a large bowl, whisk together gluten-free flour blend, baking powder, salt, sugar, and spices.
- Combine wet ingredients with dry ingredients; mix until just combined.
- Fold in diced apples gently.
- Fill muffin cups evenly with batter and bake for 9-11 minutes until a toothpick comes out clean.
- Cool slightly before dipping muffin tops in melted coconut oil followed by a cinnamon-sugar mixture.
