Ingredients
- 1 lb lean ground chicken
- 3 cloves fresh garlic, minced
- 1/2 cup grated parmesan cheese
- 1/2 cup plain breadcrumbs
- 2 large eggs
- 1 small onion, finely chopped
- Salt and pepper to taste
- 1/4 cup ketchup (for topping)
Instructions
- Preheat your oven to 375°F (190°C) and prepare a lightly greased baking dish.
- In a large mixing bowl, combine the ground chicken, minced garlic, parmesan cheese, breadcrumbs, eggs, chopped onion, salt, and pepper. Mix until just combined.
- Transfer the mixture into the baking dish and shape it into a loaf.
- Spread ketchup evenly over the top of the meatloaf.
- Bake for 45-50 minutes until the internal temperature reaches 165°F (75°C).
- Let rest for five minutes before slicing and serving warm with your choice of sides.
