- 4 pounds boneless beef chuck roast
- 12 ounces whole pepperoncini peppers (jarred)
- 2 cups beef stock
- 1 large onion
- 5 cloves garlic
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon pepper
- 2 tablespoons dried Italian seasonings
- 1 teaspoon onion powder
- 1 bay leaf
Instructions
- Prepare the slow cooker by combining beef stock, pepperoncini peppers, onion, garlic, onion powder, bay leaf, and Italian seasonings.
- Cut the beef into large chunks and season with salt and pepper.
- Sear the beef in olive oil until browned on all sides before placing it in the slow cooker.
- Cover and cook on low for about 6 hours until tender.
- Shred the beef using forks and serve topped with onions and reduced cooking liquid.
