1 1/4 lbs ground chicken
1 green cabbage (for wrappers)
1 tsp peanut butter
1 tsp sriracha sauce
1/2 tsp tamari soy sauce
1/2 tsp rice vinegar
2 tsp fresh cilantro
1 1/2 tsp ginger garlic paste
1 pinch + 1 tsp salt
1/2 lime
1/2 tsp Szechuan pepper
1/2 tsp pandan powder (optional)
1/2 tsp cayenne pepper
1 red onion
1/2 scallion
1 tsp olive oil
1 tbsp sesame oil (optional)
Instructions
Prepare the cabbage wrappers by blanching whole leaves in boiling water for about 30 seconds; set aside.
In a mixing bowl, combine ground chicken, peanut butter, sriracha sauce, tamari soy sauce, rice vinegar, cilantro, ginger garlic paste, salt, Szechuan pepper, cayenne pepper, chopped red onion, and scallion. Mix well.
Place one tablespoon of the filling onto each cabbage leaf and fold to create sealed pouches.
Cook the dumplings either by steaming them in a steamer basket for about 15 minutes or pan-frying them until golden brown before adding water to steam for another 5 minutes.
