Ingredients
- 1 cup packed brown sugar
- 1/2 cup evaporated milk
- 8 tablespoons unsalted butter, cubed
- 1 cup granulated sugar
- 1/4 cup boiling water
- 1 1/2 cups toasted and coarsely chopped pecans
Instructions
- Prepare your baking sheet by lining it with aluminum foil or a silicone mat, then spray it with nonstick cooking spray.
- In a medium saucepan over medium heat, combine granulated sugar, brown sugar, and evaporated milk. Stir until sugars dissolve completely.
- Insert a candy thermometer into the mixture and cook while stirring occasionally until it reaches 240°F (soft ball stage), then remove from heat.
- Drop cubed butter on top without stirring; let sit for about one minute before adding toasted pecans and stirring gently until combined.
- Once the mixture thickens and lightens in color, quickly drop spoonfuls onto the prepared baking sheet before they set.
- Allow pralines to set at room temperature for about 30 minutes until fully hardened.
