  • 1/2 cup evaporated milk
  • 8 tablespoons unsalted butter, cubed
  • 1 cup granulated sugar
  • 1/4 cup boiling water
  • 1 1/2 cups toasted and coarsely chopped pecans

Instructions

  1. Prepare your baking sheet by lining it with aluminum foil or a silicone mat, then spray it with nonstick cooking spray.
  2. In a medium saucepan over medium heat, combine granulated sugar, brown sugar, and evaporated milk. Stir until sugars dissolve completely.
  3. Insert a candy thermometer into the mixture and cook while stirring occasionally until it reaches 240°F (soft ball stage), then remove from heat.
  4. Drop cubed butter on top without stirring; let sit for about one minute before adding toasted pecans and stirring gently until combined.
  5. Once the mixture thickens and lightens in color, quickly drop spoonfuls onto the prepared baking sheet before they set.
  6. Allow pralines to set at room temperature for about 30 minutes until fully hardened.
