- 3/4 cup butter (softened)
- 3/4 cup Swerve Granular
- 1 large egg (room temperature)
- 1 large egg yolk (room temperature)
- 1 1/2 tsp vanilla extract
- 2 3/4 cups almond flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 2 tbsp sugar-free sprinkles
- 8 ounces cream cheese (softened)
- ⅓ cup powdered Swerve Sweetener
- 1 large egg (room temperature)
- ½ teaspoon vanilla extract
- 2 tablespoon heavy whipping cream
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, beat softened butter and granular Swerve until fluffy. Add the egg, yolk, and vanilla; mix well.
- Gradually stir in almond flour, baking powder, and salt until dough forms. Press the mixture into a greased 9×13 inch pan; sprinkle with sugar-free sprinkles.
- Bake for 12-15 minutes until golden; cool slightly.
- Beat cream cheese in another bowl until smooth; add powdered Swerve, egg, vanilla extract, and heavy cream until combined.
- Pour the filling over the cooled crust and bake again for 25-30 minutes until just set.
- Cool completely before slicing into squares.
