  • 3/4 cup Swerve Granular
  • 1 large egg (room temperature)
  • 1 large egg yolk (room temperature)
  • 1 1/2 tsp vanilla extract
  • 2 3/4 cups almond flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp sugar-free sprinkles
  • 8 ounces cream cheese (softened)
  • ⅓ cup powdered Swerve Sweetener
  • 1 large egg (room temperature)
  • ½ teaspoon vanilla extract
  • 2 tablespoon heavy whipping cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, beat softened butter and granular Swerve until fluffy. Add the egg, yolk, and vanilla; mix well.
  3. Gradually stir in almond flour, baking powder, and salt until dough forms. Press the mixture into a greased 9×13 inch pan; sprinkle with sugar-free sprinkles.
  4. Bake for 12-15 minutes until golden; cool slightly.
  5. Beat cream cheese in another bowl until smooth; add powdered Swerve, egg, vanilla extract, and heavy cream until combined.
  6. Pour the filling over the cooled crust and bake again for 25-30 minutes until just set.
