  • 1 pound sirloin steak (cut into thin strips)
  • 1 clove garlic (minced)
  • Salt and pepper (to taste)
  • 1 medium green bell pepper (cut into strips)
  • ¼ cup onion (chopped)
  • ½ cup beef broth
  • 2 tablespoons soy sauce (or tamari)
  • 8 ounces mushrooms (sliced)
  • Optional: 15 ounces baby corn

Instructions

  1. Heat oil in a large skillet or wok over medium-high heat until shimmering.
  2. Add beef strips and minced garlic; cook until browned all over. Season with salt and pepper, then remove from the skillet.
  3. If needed, add more oil to the skillet, then sauté the green bell pepper strips and chopped onion until tender.
  4. Stir in beef broth, soy sauce, mushrooms, and optional xanthan gum/baby corn; mix well.
  5. Cook until mushrooms are softened, then return beef to the skillet and heat through.
