  • 1 pound turkey bacon
  • 8 ounces cream cheese
  • ½ cup grated Parmesan cheese
  • 1½ cups sharp cheddar cheese, shredded
  • 1/3 cup avocado mayonnaise
  • 1 cup heavy cream
  • 1 store-bought cooked rotisserie chicken, chopped
  • 1½ cups diced red onion
  • 8 ounces baby bella mushrooms, sliced
  • 2 cups mozzarella cheese, shredded
  • ½ teaspoon hot sauce
  • 1 teaspoon dry mustard
  • ½ teaspoon white pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika

Instructions

  1. Preheat your oven to 375 degrees F.
  2. Cook the turkey bacon in a large skillet until crispy. Reserve three tablespoons of fat.
  3. In a medium saucepan, combine cream cheese, Parmesan, cheddar, avocado mayonnaise, heavy cream, hot sauce, mustard, and spices over medium heat until creamy.
  4. Add crumbled turkey bacon to the cheese mixture.
  5. Sauté onions in reserved fat until soft; add mushrooms and continue cooking.
  6. Stir in garlic and spinach until wilted.
  7. Combine the sautéed vegetables with the chicken and creamy cheese mixture.
  8. Pour into an 8×12 inch casserole dish and top with mozzarella.
  9. Bake for about 20 minutes until bubbly and golden brown.
