- 1 pound turkey bacon
- 8 ounces cream cheese
- ½ cup grated Parmesan cheese
- 1½ cups sharp cheddar cheese, shredded
- 1/3 cup avocado mayonnaise
- 1 cup heavy cream
- 1 store-bought cooked rotisserie chicken, chopped
- 1½ cups diced red onion
- 8 ounces baby bella mushrooms, sliced
- 2 cups mozzarella cheese, shredded
- ½ teaspoon hot sauce
- 1 teaspoon dry mustard
- ½ teaspoon white pepper
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon paprika
Instructions
- Preheat your oven to 375 degrees F.
- Cook the turkey bacon in a large skillet until crispy. Reserve three tablespoons of fat.
- In a medium saucepan, combine cream cheese, Parmesan, cheddar, avocado mayonnaise, heavy cream, hot sauce, mustard, and spices over medium heat until creamy.
- Add crumbled turkey bacon to the cheese mixture.
- Sauté onions in reserved fat until soft; add mushrooms and continue cooking.
- Stir in garlic and spinach until wilted.
- Combine the sautéed vegetables with the chicken and creamy cheese mixture.
- Pour into an 8×12 inch casserole dish and top with mozzarella.
- Bake for about 20 minutes until bubbly and golden brown.
