Ingredients
- 2 heads of broccoli (tops only)
- 8 slices well cooked and chopped turkey bacon
- 1 cup red onion (diced)
- 1 cup shredded cheddar cheese (shred it from a block)
- 1/2 cup salted and roasted sunflower seeds
- 1 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 3 tablespoons monk fruit (or erythritol)
Instructions
- In a small bowl, mix together the mayonnaise, apple cider vinegar, and monk fruit (or erythritol) until smooth. Set the dressing aside while you prepare the salad ingredients.
- In a large mixing bowl, add the chopped broccoli, turkey bacon, red onion, cheddar cheese, and sunflower seeds. Stir well to combine all ingredients evenly.
- Pour the prepared dressing over the salad mixture. Toss everything together until all ingredients are coated with dressing.
- Enjoy immediately or refrigerate for at least one hour to allow flavors to meld together before serving.
