- 1 ½ cups all-purpose flour
- 1 cup white sugar

- ½ cup sour cream
- 1 cup crushed pineapple (well-drained)

- ½ cup icing sugar
- 2 tbsp pineapple juice
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream the softened butter and sugar until light and fluffy.
- Beat in eggs one at a time followed by vanilla extract.
- Fold in sour cream until combined.
- Gradually mix dry ingredients into the wet mixture until smooth.
- Gently fold in well-drained crushed pineapple.
- Pour batter into the prepared pan and bake for 30–35 minutes or until a toothpick comes out clean.
- While baking, prepare the glaze by whisking together icing sugar and pineapple juice until smooth.
- Cool the cake completely before drizzling with glaze.
