  • 2 cups shredded rotisserie chicken
  • 1/4 lb diced turkey slices
  • 1/4 lb diced turkey pepperoni
  • 1/4 cup diced provolone cheese
  • 1/4 cup crumbled feta cheese
  • 2/3 cup diced grape tomatoes
  • 1/3 cup sliced banana peppers
  • 1/2 thinly sliced red onion
  • 1/2 cup mayonnaise
  • 1/4 cup grated parmesan cheese
  • 3 tablespoons red apple vinegar
  • 12 tablespoons banana pepper juice
  • 1 tsp oregano
  • 1 tsp garlic powder
  • Freshly cracked pepper to taste
  • Salt to taste (about 1/4 tsp)

Instructions

  1. In a mixing bowl, combine all dressing ingredients: mayonnaise, grated parmesan cheese, apple vinegar, banana pepper juice, oregano, garlic powder, salt, and pepper. Mix well.
  2. In a large bowl, combine shredded chicken, turkey slices, turkey pepperoni, cheeses, grape tomatoes, banana peppers, and red onion.
  3. Pour most of the dressing over the salad mixture and toss until evenly coated. Add additional dressing to taste if desired.
  4. Serve immediately or store in an airtight container in the refrigerator for up to four days.
