Ingredients
- 2 cups shredded rotisserie chicken
- 1/4 lb diced turkey slices
- 1/4 lb diced turkey pepperoni
- 1/4 cup diced provolone cheese
- 1/4 cup crumbled feta cheese
- 2/3 cup diced grape tomatoes
- 1/3 cup sliced banana peppers
- 1/2 thinly sliced red onion
- 1/2 cup mayonnaise
- 1/4 cup grated parmesan cheese
- 3 tablespoons red apple vinegar
- 1–2 tablespoons banana pepper juice
- 1 tsp oregano
- 1 tsp garlic powder
- Freshly cracked pepper to taste
- Salt to taste (about 1/4 tsp)
Instructions
- In a mixing bowl, combine all dressing ingredients: mayonnaise, grated parmesan cheese, apple vinegar, banana pepper juice, oregano, garlic powder, salt, and pepper. Mix well.
- In a large bowl, combine shredded chicken, turkey slices, turkey pepperoni, cheeses, grape tomatoes, banana peppers, and red onion.
- Pour most of the dressing over the salad mixture and toss until evenly coated. Add additional dressing to taste if desired.
- Serve immediately or store in an airtight container in the refrigerator for up to four days.
