Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×9-inch baking dish with olive oil.
- In a mixing bowl, whisk together cottage cheese and eggs until smooth.
- Stir in the frozen mixed veggies, shredded cheddar, garlic powder, onion powder, salt, and pepper until well combined.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 30-35 minutes until the top is golden brown. Let cool slightly before slicing and serving.
