- 1 cup mashed sweet potato
- 1 cup unsweetened almond butter
- 2 large eggs
- ⅔ cup pure maple syrup
- 2 tsp pure vanilla extract
- ⅔ cup cocoa powder
- ¾ tsp baking soda
- ½ tsp ground cinnamon (optional)
- 1 tsp sea salt
- ½ cup full-fat canned coconut milk
- 1 cup chocolate chips
- 1 tbsp coconut oil or butter
- Pinch sea salt
- 1 tsp cider vinegar or lemon juice
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8-inch round baking pan or line it with parchment paper.
- In a mixing bowl, combine mashed sweet potato, almond butter, eggs, maple syrup, vanilla extract, and cider vinegar or lemon juice until smooth.
- In another bowl, whisk together cocoa powder, baking soda, and sea salt.
- Gradually add the dry mixture to the wet ingredients and stir gently until combined.
- Fold in coconut milk and chocolate chips until evenly distributed.
- Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out clean.
- Allow to cool for about 10 minutes before transferring to a wire rack to cool completely.
