  • 2 large eggs
  • ¼ cup avocado oil
  • ⅓ cup maple syrup
  • 2 teaspoons vanilla extract
  • ⅔ cup unsweetened applesauce
  • 1¼ cups whole wheat flour
  • ¼ cup unsweetened cocoa powder
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • ⅓ cup chocolate chips

Instructions

  1. Preheat the oven to 375°F and line a muffin tin with liners.
  2. Squeeze excess moisture from the grated zucchini using a paper towel.
  3. In a large bowl, whisk together drained zucchini, eggs, avocado oil, maple syrup, vanilla extract, and applesauce until well combined.
  4. Add whole wheat flour, cocoa powder, baking soda, baking powder, cinnamon, and salt to the wet mixture; stir gently until just combined. Fold in chocolate chips.
  5. Divide the batter evenly among muffin tin compartments (about ¾ full) and sprinkle extra chocolate chips on top if desired.
  6. Bake for 18–20 minutes or until a toothpick comes out clean.
  7. Cool in the tin for about 10 minutes before transferring to a wire rack.
