Ingredients
- 3 cups shredded chicken (cooked)
- 4 cups cauliflower rice
- 8 oz cream cheese (softened) or Greek yogurt
- 1 cup shredded cheddar cheese (divided)
- 1 tbsp olive oil
- 1 cup chopped spinach, broccoli florets, or sliced mushrooms
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp paprika
- ½ tsp salt (adjust to taste)
- ½ tsp black pepper
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet over medium heat, add olive oil and sauté your choice of vegetables until tender (about 5-7 minutes).
- In a large mixing bowl, combine the shredded chicken, sautéed vegetables, cauliflower rice, cream cheese or Greek yogurt, half of the cheddar cheese, and seasonings. Mix until well combined.
- Pour the mixture into a greased 9×13 baking dish and spread evenly.
- Sprinkle the remaining cheddar cheese on top.
- Bake for 25-30 minutes until bubbly and golden.
