Ingredients

  • 2 cups frozen berries (any mixture)
  • 1 tablespoon lemon juice
  • 2 tablespoons coconut sugar
  • 2 tablespoons maple syrup
  • 1 ½ tablespoons tapioca starch
  • 1 ¾ cups rolled oats
  • 1 ¼ cups almond flour
  • ½ teaspoon baking soda
  • ⅛ teaspoon sea salt
  • ½ cup maple syrup
  • ⅓ cup coconut oil (solid)
  • ½ teaspoon pure vanilla extract

Instructions

  1. Preheat oven to 375°F and line a 9×9 baking dish with parchment paper.
  2. In a small saucepan over low-medium heat, combine frozen berries, lemon juice, coconut sugar, maple syrup, and sea salt. Cook for about 5-10 minutes until soupy.
  3. Remove some liquid and mix it with tapioca starch until smooth; return to the pot and stir until thickened.
  4. In a mixing bowl, combine rolled oats, almond flour, baking soda, and sea salt. Add maple syrup, vanilla extract, and coconut oil; mix until combined.
  5. Press most of the oatmeal mixture into the bottom of the prepared dish; spread berry mixture on top followed by reserved oatmeal mixture.
  6. Bake for 20-25 minutes until edges are golden. Let cool completely before slicing.
