- 1 lb gnocchi (gluten-free if needed)
- 7 oz vegan sour cream
- 7 oz vegan cream cheese
- 6 oz vegan chicken cubes
- 3 cups vegetable broth
- Garlic, onions, celery, carrots, spinach
- Olive oil
- Italian herbs
Instructions
- In a saucepan, heat olive oil over medium heat. Sauté diced celery, garlic, and onions until softened.
- Add vegan chicken cubes and season with salt and pepper; fry for about 3 minutes.
- Pour in the vegetable broth and bring to a boil. Add the gnocchi and cook until they float (about 2-3 minutes).
- Stir in the vegan cream cheese, sour cream, shredded carrots, Italian herbs, and spinach. Cook for an additional 2 minutes until heated through.
