  • 10 g fresh yeast
  • 1 1/2 tsp organic cane sugar
  • 1 cup white rice flour
  • 2/3 cup tapioca flour
  • 2 tsp psyllium husk powder
  • 1/2 tsp salt
  • 2 tsp oil

Instructions

  1. Activate the yeast by combining warm water with fresh yeast and sugar in a mixing bowl. Let sit until frothy (5–10 minutes).
  2. In another bowl, mix white rice flour, tapioca flour, psyllium husk powder, and salt.
  3. Pour the yeast mixture into the dry ingredients along with oil. Mix until a dough forms; knead lightly if needed.
  4. Divide dough into equal portions (about 5) and roll each into disks using a rolling pin.
  5. Preheat oven to 450°F (232°C) and line a baking sheet with parchment paper.
  6. Bake pitas for about 10 minutes or until they puff slightly.
  7. Cool on a wire rack before serving.
