Scale
  • 3 cups all-purpose gluten-free flour blend
  • 1/4 cup tapioca starch/flour
  • 3 teaspoons instant yeast
  • 1/2 cup dry milk powder
  • 4 tablespoons unsalted butter (room temperature)
  • 1 egg (beaten)
  • 1 1/4 cups warm milk
  • 3/4 cup packed light brown sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F and grease a 9-inch x 13-inch casserole dish.
  2. In a mixing bowl, combine dry ingredients: gluten-free flour blend, tapioca starch, dry milk powder, yeast, and brown sugar.
  3. In another bowl, mix wet ingredients: melted butter, egg, apple cider vinegar, and warm milk until smooth.
  4. Gradually add wet mixture to dry ingredients until fully combined into a soft dough.
  5. Roll out the dough into a rectangle and spread softened butter over it. Sprinkle with brown sugar and cinnamon.
  6. Roll tightly from one end to form a log; slice into equal pieces and place in the prepared dish.
