- 8 ounces bittersweet or semisweet chocolate
- 1 cup butter
- 1 cup sugar
- 5 eggs
- 1 tablespoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup gluten-free baking flour
- 2 packages (8oz each) cream cheese
- 2 cups cold heavy cream
- Powdered sugar
Instructions
- Preheat your oven to 325°F and spray a 10-inch springform pan with cooking spray.
- In a microwave-safe bowl, melt butter and chopped chocolate together until smooth. Stir in sugar, eggs, and gluten-free flour until well combined.
- Pour the batter into the prepared pan and bake for 30-35 minutes. Let it cool completely on a wire rack.
- For the mousse, melt more chocolate and mix with cream cheese, powdered sugar, and vanilla until smooth. Gradually add whipped heavy cream until light and fluffy.
- Spread mousse over the cooled cake and refrigerate for at least 6 hours or overnight before serving.
