Ingredients
- 1 cup old cheddar cheese (shredded)
- 1 cup gluten-free all-purpose flour with xanthan gum
- ½ tsp salt (plus extra for topping)
- ¼ tsp garlic powder
- ¼ cup salted butter (cold, cubed)
- 4–5 tbsp cold water
Instructions
- In a mixing bowl, combine shredded cheese, flour, salt, garlic powder, and cold butter. Blend together using a pastry blender or fork until crumbly.
- Gradually add cold water one tablespoon at a time until the dough forms a ball. Divide into two discs and refrigerate for at least one hour.
- Preheat oven to 375°F. Roll out one disc on a floured surface to the desired thickness and cut into squares.
- Transfer squares to a parchment-lined baking sheet. Sprinkle with salt and bake for 14-16 minutes until crisp but not browned.
- Cool on a rack before enjoying.
