- 2 teaspoons dry active yeast
- 6 tablespoons warm water (110º F)
- 2 tablespoons cane sugar
- 1 1/2 cups gluten free flour blend
- 1/8 teaspoon salt
- 1/3 cup canned coconut milk
- 1 large egg
- 2 tablespoons melted butter
- Oil for frying
- Powdered sugar for dusting
Instructions
- Activate the yeast by mixing warm water, yeast, and sugar; let it froth for about 10 minutes.
- In a bowl, combine gluten free flour blend and salt; add the yeast mixture, egg, coconut milk, and melted butter. Mix until dough forms.
- Cover and let rise for 45–60 minutes in a warm place.
- Roll the dough out to about 1/2 inch thickness on a floured surface; cut into small squares.
- Heat oil in a Dutch oven to 350º F; fry squares until golden brown on both sides.
- Drain excess oil on paper towels and dust with powdered sugar before serving.
