  • 1 large onion (thinly sliced)
  • 8 ounces Gruyere cheese (shredded)
  • 2 tablespoons butter
  • 1/2 cup dry white apple vinegar or chicken broth
  • Salt, pepper, and 1 teaspoon onion powder
  • Fresh thyme leaves

Instructions

  1. Pat the chicken thighs dry and season both sides with salt, pepper, and onion powder.
  2. In a large oven-proof skillet, melt butter over medium heat. Sear the chicken thighs skin-side down for 4-5 minutes until golden, then flip and cook for another 4 minutes. Remove from skillet.
  3. Add sliced onions to the same skillet, seasoning lightly with salt and pepper. Cook on medium-low for about 20 minutes until caramelized.
  4. Stir in fresh thyme and cook for an additional minute before adding apple vinegar or broth. Simmer until reduced by half.
  5. Nestle the chicken back into the pan among the onions, top each piece with shredded Gruyere cheese, then bake at 375°F (190°C) for 20 minutes until melted and bubbly.
