Ingredients
- 6 medium chicken thighs (skin-on, bone-in)
- 1 large onion (thinly sliced)
- 8 ounces Gruyere cheese (shredded)
- 2 tablespoons butter
- 1/2 cup dry white apple vinegar or chicken broth
- Salt, pepper, and 1 teaspoon onion powder
- Fresh thyme leaves
Instructions
- Pat the chicken thighs dry and season both sides with salt, pepper, and onion powder.
- In a large oven-proof skillet, melt butter over medium heat. Sear the chicken thighs skin-side down for 4-5 minutes until golden, then flip and cook for another 4 minutes. Remove from skillet.
- Add sliced onions to the same skillet, seasoning lightly with salt and pepper. Cook on medium-low for about 20 minutes until caramelized.
- Stir in fresh thyme and cook for an additional minute before adding apple vinegar or broth. Simmer until reduced by half.
- Nestle the chicken back into the pan among the onions, top each piece with shredded Gruyere cheese, then bake at 375°F (190°C) for 20 minutes until melted and bubbly.
