- Cooking spray or oil for greasing
- 1 tortilla (8-10 inches)
- 3 large eggs
- 1/3 cup cottage cheese
- Salt and black pepper to taste
- Diced tomatoes
- Diced green peppers
- Chopped spinach or arugula
- 1/4 cup mozzarella cheese (or choice of cheese)
- Kalamata olives
- Red onions
- Chopped shallots
- 2 cups fresh spinach
- 1/4 cup crumbled feta cheese
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a round baking dish with cooking spray or oil.
- Place the tortilla at the bottom of the prepared dish.
- In a mixing bowl, whisk together eggs and cottage cheese; season with salt and pepper.
- Pour the egg mixture evenly over the tortilla.
- Top with diced tomatoes, green peppers, spinach, olives, red onions, and sautéed shallots if desired.
- Sprinkle mozzarella cheese on top.
- Bake for 20-25 minutes or until set and golden brown.
- Let cool slightly before slicing and serving.
