- 1/2 cup tapioca starch
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 egg
- 1/4 cup warm water (adjust as needed)
- 1 tablespoon extra virgin olive oil (plus more for brushing)
- Optional: 1/4 cup minced garlic and/or chopped parsley
Instructions
- In a large mixing bowl, combine gluten-free flour, xanthan gum (if using), tapioca starch, baking powder, and salt.
- In another bowl, whisk together the egg, warm water, and olive oil until smooth.
- Gradually mix the wet ingredients into the dry ingredients to form a soft dough. Adjust consistency with more water or tapioca starch as needed.
- Divide dough into eight equal portions and flatten each to about 1/8-inch thickness.
- Optionally press minced garlic and parsley onto each piece before cooking.
- Heat a cast iron skillet over high heat, brush with olive oil, and cook each piece for about 40 seconds per side until golden brown.
