  • 2 (15oz) cans low-sodium chickpeas (drained and rinsed)
  • 12 tablespoons olive oil or avocado oil
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1/2 teaspoon kosher salt (plus more for topping)
  • 1/4 teaspoon ground black pepper

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Drain and rinse the chickpeas thoroughly. Spread them on a kitchen towel and pat dry. Let them rest for an additional 5-10 minutes on the baking sheet.
  3. In a small bowl, mix chili powder, garlic powder, onion powder, cumin, salt, and pepper. Drizzle olive oil over the dried chickpeas and toss well to coat. Add the seasoning mix and toss again until evenly coated.
  4. Spread the seasoned chickpeas in a single layer on the baking sheet. Roast for 25-30 minutes, tossing every 10 minutes for even cooking.
  5. Allow to cool on the pan for about 5-10 minutes before serving.
