  • 4 tbsp keto taco seasoning
  • 2 tbsp tomato paste
  • 2 medium eggs
  • ½ cup heavy whipping cream
  • 1½ cups shredded cheese
  • 1 jalapeño (sliced, optional)

Instructions

  1. Preheat the oven to 180°C/350°F.
  2. In a large skillet over high heat, cook diced onion, bell pepper, minced garlic, and ground beef until browned. Use a spatula to break up the beef.
  3. Mix in taco seasoning and tomato paste until well combined. Spread this mixture evenly in a casserole pan.
  4. In a mixing bowl, whisk together eggs, heavy cream, and half of the shredded cheese. Pour over the beef layer.
  5. Top with remaining cheese and jalapeño slices if desired.
  6. Bake uncovered for 15-17 minutes until golden and bubbly. Let rest for 5 minutes before serving.
