- 1 onion (diced)
- 1 bell pepper (diced)
- 2 cloves garlic (minced)
- 2 lb ground beef
- 4 tbsp keto taco seasoning
- 2 tbsp tomato paste
- 2 medium eggs
- ½ cup heavy whipping cream
- 1½ cups shredded cheese
- 1 jalapeño (sliced, optional)
Instructions
- Preheat the oven to 180°C/350°F.
- In a large skillet over high heat, cook diced onion, bell pepper, minced garlic, and ground beef until browned. Use a spatula to break up the beef.
- Mix in taco seasoning and tomato paste until well combined. Spread this mixture evenly in a casserole pan.
- In a mixing bowl, whisk together eggs, heavy cream, and half of the shredded cheese. Pour over the beef layer.
- Top with remaining cheese and jalapeño slices if desired.
- Bake uncovered for 15-17 minutes until golden and bubbly. Let rest for 5 minutes before serving.
