- 1 onion (diced)
- 1 bell pepper (diced)
- 2 cloves garlic (minced)
- 2 lb ground beef
- 4 tablespoons keto taco seasoning
- 2 tablespoons tomato paste
- 2 medium eggs
- 1½ cups shredded cheese
- ½ cup heavy whipping cream
- 1 jalapeño (sliced, optional)
Instructions
- Preheat the oven to 180°C/350°F. In a large skillet, sauté onions, bell pepper, garlic, and ground beef over high heat until the beef is browned.
- Stir in taco seasoning and tomato paste until well combined; pour into a casserole pan.
- In a bowl, whisk together eggs, heavy cream, and half of the cheese. Pour over the beef layer.
- Top with remaining cheese and optional jalapeños. Bake uncovered for 15-17 minutes until golden brown.
- Let it rest for five minutes before serving.
