Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 lb potato gnocchi
- 4 cloves garlic
- 1 cup heavy cream (or dairy-free alternative)
- ½ cup chicken broth (or vegetable broth)
- ½ cup grated Parmesan cheese
- Olive oil or unsalted butter
- 1 tsp Italian seasoning
Instructions
- In a large skillet over medium heat, heat olive oil or butter. Add bite-sized chicken pieces, season with salt, pepper, and Italian seasoning. Cook until golden brown (6-8 minutes). Remove and set aside.
- In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
- Pour in heavy cream and chicken broth; stir to combine and simmer until slightly thickened.
- Stir in gnocchi and cooked chicken along with Parmesan cheese. If using, add spinach or kale. Cook for an additional 3-5 minutes until heated through.
- Taste and adjust seasonings as needed before serving hot.
