Ingredients
- 1 large head of cauliflower, cut into florets
- 2 cups cooked chicken breast, shredded
- 1 cup buffalo sauce (adjust to taste)
- ½ cup ranch dressing
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 3 green onions, chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish.
- Steam or blanch cauliflower florets for about 5-7 minutes until just tender. Drain and pat dry.
- In a large bowl, mix the shredded chicken with buffalo sauce and ranch dressing. Add cauliflower florets, tossing to coat evenly. Season with salt and pepper.
- Transfer the mixture into the prepared baking dish; sprinkle cheddar and mozzarella cheeses on top.
- Bake for 20-25 minutes until cheese is melted and bubbly.
- Garnish with chopped green onions before serving hot.
