- 4 slices thick-cut turkey bacon (diced)
- 1 tablespoon vegetable oil
- 1 tablespoon butter
- 4 (1-pound, total) boneless skinless chicken breasts (pounded to ¼-inch thickness)
- Salt and fresh ground pepper (to taste)
- ½ teaspoon garlic powder
- ½ teaspoon smoked or sweet paprika
- 4 ounces cream cheese (softened)
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon dried dill weed
- ½ teaspoon dried chives
- 4 ounces shredded cheddar cheese (white or yellow)
- Chopped fresh parsley
- Sliced green scallions
Instructions
- Preheat your oven to 400°F.
- Lightly grease a 9×13 baking dish with cooking spray.
- In a large skillet over medium-high heat, cook diced turkey bacon until crispy; remove from skillet but reserve fat.
- Add vegetable oil to the skillet and sear pounded chicken breasts seasoned with salt, pepper, garlic powder, and paprika for about 2-3 minutes on each side until golden brown.
- In a bowl, mix softened cream cheese with garlic powder, onion powder, dill weed, and chives.
- Arrange chicken in the baking dish; spread cream cheese mixture over each piece and top with shredded cheddar cheese and half of the cooked turkey bacon.
- Bake uncovered for approximately 15 minutes or until chicken is cooked through and cheese is lightly browned.
- Garnish with remaining turkey bacon pieces before serving.
