- 1 1/2 cups fine almond flour
- 1/4 cup cocoa powder
- 2 tbsp Dutch cocoa (or additional regular)
- 2 1/4 tsp baking powder
- 1/2 tsp salt
- 1/3 cup water or milk of choice
- 3 eggs (or vegan alternative)
- 1/3 cup granulated erythritol
- 1 1/2 tsp pure vanilla extract
Instructions
- Preheat the oven to 350°F. Grease and line an 8-inch baking pan with parchment paper.
- In a large mixing bowl, combine almond flour, cocoa powder, Dutch cocoa, baking powder, and salt.
- In another bowl, whisk together water (or milk), eggs, erythritol, and vanilla extract.
- Pour the wet mixture into the dry ingredients and stir until smooth.
- Spread the batter evenly in the prepared pan and bake for about 14 minutes or until firm.
- Allow to cool completely before frosting or serving.
