- 1 pound boneless, skinless chicken breast or thighs

- 2 cups cooked rice, quinoa, or cauliflower rice
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup crumbled feta cheese
- Fresh parsley or dill, for garnish
Instructions
- Marinate the chicken by combining olive oil, lemon juice, oregano, minced garlic, smoked paprika, salt, and pepper in a bowl. Add chicken and let it marinate for at least 15 minutes.
- Heat a skillet over medium heat and cook the marinated chicken for about 6-7 minutes per side until golden brown and fully cooked.
- Prepare the tzatziki sauce by mixing Greek yogurt with grated cucumber, olive oil, lemon juice, minced garlic, dill, salt, and pepper in a bowl.
- Assemble your bowls with a scoop of rice or quinoa topped with sliced chicken, fresh vegetables, and tzatziki sauce.
