  • 1/2 cup homemade ranch dressing
  • 2 tbsp avocado oil
  • 1 large zucchini (quartered)
  • 1 large yellow squash (quartered)
  • 2 cups Brussels sprouts (quartered)
  • 1/2 yellow onion (sliced)
  • Seasonings: salt, dill weed, parsley, chives, onion powder, garlic powder, black cracked pepper

Instructions

  1. Preheat oven to 400°F.
  2. Chop vegetables and cut chicken into bite-sized pieces.
  3. In a mixing bowl, combine chicken with avocado oil and seasonings; toss to coat.
  4. Arrange vegetables on a baking sheet; drizzle with oil and season lightly.
  5. Add seasoned chicken to the baking sheet; bake for about 30 minutes or until cooked through.
  6. In the last few minutes of baking, sprinkle turkey bacon on top to crisp up.
