- 2 lbs. chicken breast (cut into bite-size pieces)
- 4 slices turkey bacon (cooked and chopped)
- 1/2 cup homemade ranch dressing
- 2 tbsp avocado oil
- 1 large zucchini (quartered)
- 1 large yellow squash (quartered)
- 2 cups Brussels sprouts (quartered)
- 1/2 yellow onion (sliced)
- Seasonings: salt, dill weed, parsley, chives, onion powder, garlic powder, black cracked pepper
Instructions
- Preheat oven to 400°F.
- Chop vegetables and cut chicken into bite-sized pieces.
- In a mixing bowl, combine chicken with avocado oil and seasonings; toss to coat.
- Arrange vegetables on a baking sheet; drizzle with oil and season lightly.
- Add seasoned chicken to the baking sheet; bake for about 30 minutes or until cooked through.
- In the last few minutes of baking, sprinkle turkey bacon on top to crisp up.
- Drizzle with ranch dressing before serving.
