- 1 lb ground beef
- 20 oz frozen cauliflower rice
- 10 oz can diced tomatoes & chilies
- 1 packet taco seasoning
- 1/2 cup water
- 1 diced bell pepper
- 1 small diced yellow onion
- 1 tbsp oil
- 1+ cups shredded cheddar cheese
Instructions
- In a large skillet over medium heat, sauté the onion and bell pepper in oil for 3-4 minutes until softened.
- Add ground beef, cooking until brown; stir in taco seasoning and water until well mixed.
- Incorporate frozen cauliflower rice and diced tomatoes; simmer for about 10 minutes or until heated through.
- Top with shredded cheddar cheese and allow it to melt before serving.
- Serve hot with your choice of toppings.
