- 1 tablespoon olive oil
- 2 cups chopped vegetables (such as red onion, bell pepper, mushrooms or broccoli)
- 1 pound ground turkey or chicken sausage
- 8 eggs
- 2 pinches salt (to taste)
- 2 teaspoons unsalted butter
- 8 burrito size tortillas
- 2 cups shredded cheddar cheese (or Monterey jack, pepper jack or a combination)
- Heat olive oil in a nonstick skillet over medium heat. Sauté chopped vegetables until softened (about 4 minutes), then transfer to a bowl.
- In the same skillet, cook ground turkey or chicken sausage until browned, then mix it with the sautéed veggies.
- Whisk eggs with salt in a bowl. Clean the skillet, add butter, and scramble the whisked eggs over medium-low heat until fluffy.
- Combine cooked eggs with sausage and veggies in the bowl.
- On each tortilla, place 1/8 of the filling and sprinkle with cheese. Wrap tightly into burritos.
- Bake at 375°F for 5-10 minutes if serving immediately or flash freeze for future meals.
