Ingredients

  • 1 tablespoon olive oil
  • 2 cups chopped vegetables (such as red onion, bell pepper, mushrooms or broccoli)
  • 1 pound ground turkey or chicken sausage
  • 8 eggs
  • 2 pinches salt (to taste)
  • 2 teaspoons unsalted butter
  • 8 burrito size tortillas
  • 2 cups shredded cheddar cheese (or Monterey jack, pepper jack or a combination)

Instructions

  1. Heat olive oil in a nonstick skillet over medium heat. Sauté chopped vegetables until softened (about 4 minutes), then transfer to a bowl.
  2. In the same skillet, cook ground turkey or chicken sausage until browned, then mix it with the sautéed veggies.
  3. Whisk eggs with salt in a bowl. Clean the skillet, add butter, and scramble the whisked eggs over medium-low heat until fluffy.
  4. Combine cooked eggs with sausage and veggies in the bowl.
  5. On each tortilla, place 1/8 of the filling and sprinkle with cheese. Wrap tightly into burritos.
  6. Bake at 375°F for 5-10 minutes if serving immediately or flash freeze for future meals.
