Ingredients

  • 1 tsp olive oil
  • ⅓ cup white onion, chopped
  • 1 jalapeño, finely chopped
  • 2 15 oz black beans, drained and rinsed
  • ¾ cup tomato, chopped
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp cumin
  • ½ tsp salt
  • 2 Tbsp hot sauce
  • 6 large tortillas (burrito size)
  • 6 tostadas
  • 6 fajita size tortillas (to close the wrap)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté chopped onions until translucent (about 3 minutes).
  2. Stir in garlic powder, chili powder, paprika, cumin, salt, tomatoes, jalapeños, black beans, and hot sauce. Simmer until heated through.
  3. On a large tortilla, place a scoop of the black bean mixture in the center. Add cheese and toppings as desired.
  4. Top with a tostada and fold the edges of the tortilla around it.
  5. Lightly spray a pan with oil and cook the wrap folded side down for 2–3 minutes until browned; flip and toast the other side for another 3 minutes.
