- 1 tsp olive oil
- ⅓ cup white onion, chopped
- 1 jalapeño, finely chopped
- 2 15 oz black beans, drained and rinsed
- ¾ cup tomato, chopped
- 1 tsp garlic powder
- 1 tsp chili powder
- 1 tsp paprika
- 1 tsp cumin
- ½ tsp salt
- 2 Tbsp hot sauce
- 6 large tortillas (burrito size)
- 6 tostadas
- 6 fajita size tortillas (to close the wrap)
Instructions
- Heat olive oil in a large skillet over medium heat. Sauté chopped onions until translucent (about 3 minutes).
- Stir in garlic powder, chili powder, paprika, cumin, salt, tomatoes, jalapeños, black beans, and hot sauce. Simmer until heated through.
- On a large tortilla, place a scoop of the black bean mixture in the center. Add cheese and toppings as desired.
- Top with a tostada and fold the edges of the tortilla around it.
- Lightly spray a pan with oil and cook the wrap folded side down for 2–3 minutes until browned; flip and toast the other side for another 3 minutes.
