  • 2 15 oz black beans, drained and rinsed
  • ¾ cup tomato, chopped
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp cumin
  • ½ tsp salt
  • 2 Tbsp hot sauce
  • 6 large tortillas (burrito size)
  • 6 tostadas
  • 6 fajita size tortillas (to close the wrap)
  • ⅓ cup sour cream
  • 1½ cup cheese, shredded
  • 1½ cup romaine, shredded
  • ½ cup salsa (optional)
  • 1 avocado, sliced thin (optional)
  • 2 Tbsp cilantro, chopped

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add chopped onions and sauté until translucent (about 3 minutes).
  2. Stir in garlic powder, chili powder, paprika, cumin, salt, jalapeños, tomatoes, black beans, and hot sauce. Cook for 5 minutes until flavors meld.
  3. On a burrito-sized tortilla, layer the black bean mixture, cheese, sour cream, romaine lettuce, and optional toppings like avocado. Place a tostada on top and cover with a smaller fajita-sized tortilla.
  4. Heat a skillet over medium heat; place the wrap folded side down until golden brown (about 2-3 minutes). Flip to toast the other side.
  5. Repeat with remaining wraps and serve warm with optional salsa or cilantro.
