- 2 1/2 cups flour (spelt, white whole wheat, or all-purpose)
- 1 cup vegan butter (room temperature)
- 1 cup organic pure cane sugar
- 1/4 cup unsweetened applesauce
- 2 teaspoons vanilla extract
- 2 teaspoons cream of tartar
- 1 teaspoon baking soda
- Cinnamon and sugar for coating
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a bowl, mix flour, cream of tartar, baking soda, and salt; set aside.
- In another bowl, cream together vegan butter and sugar until smooth. Add applesauce and vanilla; mix well.
- Gradually combine dry ingredients into the wet mixture until just mixed. Chill dough if too soft.
- Roll dough into 1-inch balls and coat in cinnamon-sugar mixture.
- Place on the prepared baking sheet about 2 inches apart and bake for 8-9 minutes.
- Cool briefly on the pan before transferring to a wire rack.
